Lemony Bok Choy

Serves 4

INGREDIENTS

1 pound baby bok choy, washed and sliced in half lengthwise
¼ cup shallots, chopped
1 garlic clove, minced
1 ½ Tbsp olive oil
3 Tbsp fresh lemon juice
2 Tbsp lemon zest
½ tsp sea salt

Optional: red pepper flakes

INSTRUCTIONS

In a bowl mix the lemon zest, lemon juice, salt, red pepper flakes and garlic and set aside. Heat the olive oil in a skillet add the shallots and stir until translucent, add the bok choy halves cut side down and cook for about two minutes until the bottoms soften and the outer leaves wilt. Turn the bok choy over and drizzle with the reserved lemon mixture. After 2 minutes turn the bok choy once more, cook for an additional minute and serve. This is a wonderful side dish to serve with chicken or fish. It can also be a great vegan dish served with brown basmati rice.
