Herbed Cabbage Salad

Serves 4

1 Green cabbage, shredded
2 Carrots, peeled and shredded
½ Cup fresh cilantro, chopped
¼ Cup fresh basil, chopped
¼ Cup fresh mint chopped
½ Cup raw pumpkin seed
2 Tbsp black sesame seeds

Dressing

1 Cup apple cider vinegar
1 Cup extra virgin olive oil
1 Garlic clove
¼ Cup of water
1 Tbsp Dijon mustard
2 Tbsp hemp seeds
1 Tbsp honey
½ Tsp sea salt

Instructions

Place all the dressing ingredients in a blender and blend until smooth.

Place all the salad ingredients in a bowl and mix together, toss the salad with the dressing. Let the salad sit for 15 minutes before serving so the cabbage softens and absorbs the flavors of the dressing.

  3. Good for your digestion due to its high fiber content. Cabbage is high in soluble fiber, which has been shown to increase the beneficial bacteria in the gut. 

  4. May help lower blood pressure. Cabbage is high in Potassium which is an important mineral, it helps regulate blood pressure by counteracting the effects of sodium.

Uses in the kitchen: Great raw in salads, pickled in sauerkraut, sautéed in stir-fries.
